The difference between Liver Pudding and Scrapple is the latter has cornmeal and buckwheat flour in it. Fry them both.

The Colorado Division of Wildlife used to require hunters to keep the heart and liver from big game as they were considered “edible portions”. They would check you and ticket you if you didn’t have them. Im sure most went to the dogs after the hunter got home. Mine did. A few years back they issued a revision, stating “Internal Organs are no longer considered edible portions”. One of the few smart moves the Wildlife Commission ever made, IMHO.
